The Spinach Roll That Always Steals the Table

Sliced spinach roulade spirals on a platter

There’s always that one dish on the table that disappears first, and for me, it’s this spinach roll.

I remember seeing it at family gatherings, sliced into perfect green spirals, neatly arranged on a platter. It looked fancy, almost like something complicated… but once you learn the technique, it becomes one of those recipes you come back to again and again.

This version keeps the traditional charm of a classic spinach roulade, but with a few lighter, healthier tweaks: more protein, less heaviness, and just as much flavour.

  • Lighter version with Greek yogurt
  • Lean turkey ham or veggie option
  • Perfect for meal prep or guests

Ingredients

For the sponge

  • 6 egg whites
  • 3 egg yolks
  • 3 tbsp milk
  • 3 tbsp water
  • 300 g Cabera Frozen Spinach (thawed, well drained, finely chopped)
  • 100 g whole wheat or oat flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp olive oil (optional)

For the filling

  • 250 g low-fat fresh cheese or cottage cheese
  • 2–3 tbsp Greek yogurt
  • Salt, pepper, and herbs to taste
  • 150–200 g lean turkey or chicken ham, thinly sliced
  • Optional: diced peppers or tomatoes
  • Optional: 1–2 mashed boiled egg yolks
  • Optional: minced garlic and a drizzle of olive oil

Method

  1. Prepare the sponge. Preheat oven to 180°C. Whisk egg whites to stiff peaks. In another bowl, mix egg yolks with milk, water, salt and the drained chopped spinach. Gently add flour and baking powder, then fold in egg whites to keep it airy.
  2. Bake. Spread evenly on a baking tray lined with parchment paper. Bake 15–20 minutes until set but still soft.
  3. Roll while warm. Turn the sponge onto a damp kitchen towel, roll gently while warm, and let cool completely.
  4. Prepare the filling. Mix fresh cheese with Greek yogurt, salt, pepper and herbs. Add ham, vegetables and optional mashed yolks or garlic and olive oil.
  5. Assemble. Unroll the cooled sponge, spread the filling evenly, and roll back into a tight log.
  6. Chill. Wrap in plastic and refrigerate at least 1–2 hours.

Serving: Slice into spirals and serve cold as an appetizer, on a party platter, or as a light protein-rich meal.

Tips and variations

  • Swap ham for grilled vegetables for a vegetarian version.
  • Use herbs like dill or parsley for freshness.
